Ingredients

  • 1 cup lime juice freshly squeezed is best
  • 1 cup sugar adjust to taste
  • 1 tablespoon lime zest optional, for more lime flavor
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 2 cups whole milk or heavy cream for a creamier texture

Instructions

Make the Lime Base

  • In a mixing bowl, combine the lime juice, sugar, lime zest (if using), salt and water. Stir until the sugar is fully dissolved. This may take a few minutes.

Add the Milk/Cream

  • Mix the lime juice mixture with the milk or heavy cream. Stir until well combined.

Prepare the Mixture for Freezing

  • Pour the mixture into a shallow container that is freezer-safe (a metal or glass dish works well). (Your container, measuring 15cm x 12cm, is approximately 5.9 inches x 4.7 inches.)

Freeze the Sherbet

  • Place the container in the freezer. After about 1-2 hours, stir the mixture with a fork to break up any ice crystals that form. Return it to the freezer.
  • Repeat this process every 30 minutes for about 2-3 hours, until the sherbet is firm but still scoopable.

Serve

  • Scoop the lime sherbet into bowls or cones and enjoy! You can garnish with lime slices or mint leaves if desired.
