1lbs.chicken breastboneless and skinless (2 chicken breasts)
2Tbspolive oildivided
2tspgarlic powder
1tspdried oregano
1zucchinithinly sliced
1/2cupcherry tomatoescut in half
1/2medium yellow oniondiced
1/3cupkalamata olivespitted
1/2cupjarred roasted red peppersthinly sliced
1/2cupmozzarellagrated
1/2cupfetacrumbled
1Tbspfresh parsleyfor garnish
Kosher salt and fresh ground pepper to taste
Instructions
Preheat your oven to 400 degrees F.
Slice the chicken breasts horizontally and place them in a medium bowl. Drizzle with 1 Tbsp of olive oil and season with garlic powder, oregano, Kosher salt, and fresh ground pepper.
Transfer the chicken to a 9 x 13-inch baking dish and top with the zucchini, tomatoes, onions, roasted red peppers, and kalamata olives. Season again with Kosher salt and fresh ground pepper then drizzle the remaining 1 Tbsp of olive oil over top.
Top with the crumbled feta and grated mozzarella cheeses.
Transfer the baking dish to the preheated oven and bake uncovered for about 20 minutes or until the chicken is done. The chicken should have an internal temperature of at least 165 degrees F. when checked with an instant-read thermometer.
Broil for 2-3 minutes to brown the cheese if you like.
Remove from the oven and allow to rest for 5 – 10 minutes before serving.
