Mediterranean Chicken Bake

This Mediterranean Chicken Bake is simple to make, healthy, and, most of all, delicious. Thinly sliced chicken breasts are at the bottom of the casserole. They are then topped with roasted red peppers, zucchini, onions, and cherry tomatoes, all covered with lovely herbs and garlic, and topped with feta and mozzarella. A true winner of a meal.

What is Typical Mediterranean Food?

Mediterranean food mainly consists of olive oil, chicken, shrimp, seafood, legumes, nuts, seeds, vegetables and fruits. Dairy, eggs and meat are used in moderation.

What you need for this Chicken Dinner

Recipe Ingredients.

Recipe Ingredients

Chicken breast, boneless and skinless – This is approximately 2 chicken breasts.

Olive oil, divided – You use this for the chicken and the vegetables.

Garlic powder – You can use fresh garlic or granulated garlic.

Dried oregano – Fresh is a nice option, too.

Zucchini, thinly sliced – You want the zucchini to cook fast, so nice thinner slices work well.

Cherry tomatoes, cut in half – These are better cut in half, but you could leave them whole also.

Yellow onion, diced – Just a regular onion does the trick.

Kalamata olives, pitted – As long as they are pitted, you can leave these whole.

Jarred roasted red peppers, thinly sliced – I love the flavor of jarred roasted red peppers, and this is a perfect time to use them.

Mozzarella, grated – A little goes a long way here.

Feta, crumbled – This is a must for a Mediterranean cheese; it adds a nice salty burst.

Fresh parsley, for garnish – Some freshness to finish goes a long way.

Kosher salt and fresh ground pepper to taste – The usual suspects are here for seasoning.

How to make this One Pan Chicken Dinner

Preheat your oven to 400 degrees F.

Slice the chicken breasts horizontally and place them in a medium bowl. Drizzle with 1 Tbsp of olive oil and season with garlic powder, oregano, Kosher salt, and fresh ground pepper. Transfer the chicken to a 9 x 13-inch baking dish.

Vegetables added.
Salt and pepper added.
Oil added.

Now top with the zucchini, tomatoes, onions, roasted red peppers, and Kalamata olives. Season again with Kosher salt and fresh ground pepper then drizzle the remaining 1 tbsp of olive oil over top.

Feta added.
Mozzarella added..

Top with the crumbled feta and grated mozzarella cheeses.

Transfer the baking dish to the preheated oven and bake uncovered for about 20 minutes or until the chicken is done. The chicken should have an internal temperature of at least 165 degrees F. when checked with an instant-read thermometer.

Finished casserole.

Broil for 2-3 minutes to brown the cheese if you like.

Remove from the oven and allow to rest for 5 – 10 minutes before serving.

Recipe FAQs

Do not overcook the casserole, as the chicken will dry out, and the vegetables will get mushy.

If you prefer to have the chicken cut into strips, then this is doable also.

You can add a squirt of lemon juice when finished if you like also.

Substitutions

You can change up the zucchini for eggplant if you prefer.

The onions can be a sweet onion or a red onion also. The tomato can be a grape tomato, or you can use a whole sliced tomato in wedges.

You could also add in or substitute green, red, orange or yellow fresh peppers too.

  • 1 lbs. chicken breast boneless and skinless (2 chicken breasts)
  • 2 Tbsp olive oil divided
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 zucchini thinly sliced
  • 1/2 cup cherry tomatoes cut in half
  • 1/2 medium yellow onion diced
  • 1/3 cup kalamata olives pitted
  • 1/2 cup jarred roasted red peppers thinly sliced
  • 1/2 cup mozzarella grated

  • Kosher salt and fresh ground pepper to taste
