Mediterranean Meatloaf
This Mediterranean Meatloaf is like no other with the additions of feta, sundried tomatoes, olives and more. Serve it up with great sides like tzatziki, Greek salad and lemony Greek potatoes.

- 2 lb. ground lamb or beef
- 2 eggs beaten
- 1/3 cup fine breadcrumbs
- 1/4 cup sundried black olives finely diced
- 1/4 cup sundried tomatoes finely diced
- 1/3 cup crumbled feta heaping
- 1/4 cup roasted peppers finely diced
- 3 cloves garlic minced
- 1/2 sweet onion finely diced
- Salt and pepper to taste
Preheat oven to 350F.
In a large bowl, combine all the ingredients using your hands to mix well. I like to use a claw method with my hands, as it lightly mixes the ingredients without overmixing them.
Place in a loaf pan and bake for 1 hour. Let the meatloaf rest for 10 minutes. Slice and serve with lemon potatoes, Greek salad and tzatziki.
