- 9- inch pie crust I used homemade
- ¼ cup unsalted butter
- ¾ cup corn syrup
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon table salt
- 1 cup coconut sweetened flakes
- ¾ cup quick oats
Heat oven to 350°F.
Prepare a 9-inch pie crust.
In a large microwave-safe bowl, melt butter.
Add corn syrup and sugar. Mix with a wire whisk.
Then add eggs and whisk until combined.
Next, add the vanilla and salt.
Finally, add the coconut and oats. Fold in with a rubber spatula.
Pour filling into prepared unbaked pie crust.
Bake pie for 50-60 minutes or until crust is golden brown and center does not wiggle. If the crust gets too brown, cover with thin strips of foil or pie crust saver to prevent excessive browning.
Let stand at least 2 hours before serving.
