Roasted Grape Tomatoes
Roasted Grape Tomatoes take on a whole different flavor profile from fresh as they become sweeter and have more intense tomato goodness. Perfect for an appetizer with whipped feta, as bruschetta, or in a pasta sauce. They make a great side dish also with meats, chicken, and fish.

- 2 lbs grape tomatoes
- ¼ cup olive oil
- 1 tsp Kosher salt
- Freshly ground pepper to taste
- ¼ tsp crushed red chili flakes
- Chopped parsley for garnish
Preheat oven to 300 degrees F.
On a large rimmed baking sheet spread the tomatoes out in a single layer.
Drizzle the olive oil over the tomatoes then sprinkle the Kosher salt, fresh ground pepper, and chili flakes over the tomatoes, gently toss to coat.
Roast in the 300-degree F oven for 30 minutes.
After 30 minutes increase the heat to 425 degrees F (while the tomatoes are still in the oven) and continue to roast for 10-15 minutes more.
Once the tomatoes begin to char, they are done. This might even happen before the oven has reached 425F keep an eye on them.
Remove the pan from the oven and allow it to cool.
Refrigerate until ready to eat. Eat cold, at room temperature, or warm.
Just before serving sprinkle with Kosher salt, a dash of olive oil, and chopped parsley.
Note: Serve these with whipped feta as an appetizer or side dish, whirl the tomatoes to make an excellent base for a sauce, or serve on top on pasta with fresh basil and Parmesan cheese.
If your tomatoes are acidic sprinkle with a little sugar too.
