Tomato Cucumber Onion Salad

Ingredients

  • 1 lb cherry tomatoes ripe
  • 1 large cucumber
  • 1 small red onion
  • A handfull of fresh herbs basil, dill and parsley
  • 1/2 cup crumbled feta cheese

Dressing

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp dry oregano
  • Salt and ground pepper to taste

Instructions

  • Slice the cucumber into thin half-moons, thinly slice the red onion, and halve the cherry tomatoes. Add everything to a large serving bowl.
  • Add the chopped fresh herbs, then gently toss to combine.
  • In a small jar, add the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and black pepper. Shake it until the dressing is well emulsified.
  • Place the salad in a serving dish and top with crumbled feta cheese, then pour the dressing over the salad and toss gently until all the vegetables are evenly coated.
  • Let the salad sit for 10–15 minutes before serving to allow the flavors to meld. Toss once more and adjust the seasoning with additional salt, pepper, or vinegar if needed. Serve chilled or at room temperature.
