Red onion – Pick a small red onion and slice it thinly; it adds a nice sharpness to the salad, so I wouldn’t omit it. If you’re up for a milder onion flavor, put sliced onion under water for 30 minutes and then drain it well.
Fresh herbs – We love using basil, dill and parsley all together, but you can use the ones you have on hand.
Crumbled feta cheese – It provides a salty kick that combines great with the vegetables’ freshness.
Extra virgin olive oil – Use a good-quality olive oil in this recipe; it’s totally worth it.
Red wine vinegar – Vinegar is a must in any vinaigrette. You can swap with balsamic or apple cider vinegar if desired.
Dijon mustard – Mustard is key for the dressing. It adds a creamy texture and lots of flavor.

How to Make Cucumber Tomato Salad



Slice the cucumber into thin half-moons, thinly slice the red onion, and halve the cherry tomatoes. Add everything to a large serving bowl.

In a small jar, add the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and black pepper. Shake it until the dressing is well emulsified.
Place the salad in a serving dish and top with crumbled feta cheese, then pour the dressing over the salad and toss gently until all the vegetables are evenly coated.
Let the salad sit for 10–15 minutes before serving to allow the flavors to meld. Toss once more and adjust the seasoning with additional salt, pepper, or vinegar if needed. Serve chilled or at room temperature.
