Tortellini Pasta Salad

Delicious and flavor-packed cheese Tortellini Pasta Salad. This salad is packed full of wonderful Italian ingredients like tortellini, salami, bocconcini, tomatoes, olives and more.

Ingredients

  • 10 oz cheese tortellini
  • 1 cup cubed salami
  • 1 cup cherry tomatoes halved
  • 1/2 cup can sliced green olives diced
  • 1/2 cup can sliced black olives
  • 1 cucumber diced
  • 6 oz jar roasted red peppers sliced
  • 8 oz mozzarella balls fresh
  • 1/4 cup fresh basil chopped

Vinaigrette

  • 1/4 cup olive oil
  • 2 Tbsp. balsamic vinegar
  • 2 garlic cloves minced
  • 1 tsp italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions

  • Cook the pasta according to the manufacturer's instructions. Drain and let cool.
  • Mix the ingredients for the vinaigrette in a small bowl or jar. Set aside.
  • Combine the cooled pasta with the salami, mozzarella, olives, cherry tomatoes, cucumber and roasted red peppers.
  • Combine the dressing in a jar and shake. Pour over the dressing and toss well. Season with salt and pepper to taste and toss again with chopped fresh herbs like basil or parsley.
  • Refrigerate for several hours and serve.
