Enjoy this cooling Vodka Cucumber Cocktail with Melon on any hot day. I love the refreshing vibe of this libation. Perfect for when company arrive also.
First, prepare the melon syrup. You can go straight to the cocktail and use a simple syrup if desired.
Place the melon cubes in a blender or food processor and blend until you get a smooth purée.
Pass the purée through a fine mesh strainer to remove the thicker pulp.
In a small saucepan, combine the melon juice, sugar, and water. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved (it doesn’t need to boil hard—just a gentle simmer with a few bubbles).
Remove from heat and let it cool. Store in a clean jar or bottle in the fridge. It will keep for about 7 to 10 days.
Vodka Cucumber Cocktail
Cut a few pieces of ripe honeydew melon and cucumber, remove seeds and rind and large dice.
Add it to the bottom of the glass and muddle it using a cocktail muddler. Add ice cubes, melon syrup, and vodka.
Then, top with club soda and garnish with cucumber slices. Stir and enjoy.
