This Vodka Cucumber Cocktail with Melon is light and ultra-refreshing. Its ideal level of booze makes it perfect for warm summer days. If you enjoy melon, then you’ll love this perfect cocktail, as it uses a simple melon syrup, fresh fruit and cucumbers.

Ingredients for the Best Cucumber Vodka Cocktail

Recipe Ingredients

Vodka – Vodka is chosen for this cocktail because it has a mild flavor. You could swap it for gin if desired.

Honeydew Melon – Use a ripe melon of any kind for best results. Honeydew marries great with the cucumber, though.

Sugar – You’ll need it to prepare the melon syrup. You can also make a simple syrup and muddle the melon.

Club soda – Adds lovely bubbles to your cocktail; you can also use carbonated water.

Cucumber – Only a few slices are needed to make this cocktail.

Ice – Your ally to make this cocktail truly refreshing.

How to make this cucumber cocktail

Blending melon and water.
Straining melon pulp.

First, prepare the melon syrup. You can go straight to the cocktail and use a simple syrup if desired, which is an equal amount of sugar and water.

Place the melon cubes in a blender or food processor and blend until you get a smooth purée.

Pass the purée through a fine mesh strainer to remove the thicker pulp.

In a small saucepan, combine the melon juice, sugar, and water. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved (it doesn’t need to boil hard—just a gentle simmer with a few bubbles).

Remove from heat and let it cool. Store in a clean jar or bottle in the fridge. It will keep for about 7 to 10 days.

Now you’re ready to prepare your cocktail.

Cut a few pieces of ripe honeydew melon and cucumber, remove seeds and rind and large dice.

Add it to the bottom of the glass and muddle it using a cocktail muddler. Add ice cubes, melon syrup and vodka.

Then, top with club soda and garnish with cucumber slices. Stir and enjoy.

FAQS

Simple Syrup

You don’t have to make a melon simple syrup, but just a plain simple syrup will also work. A simple syrup will last for a month in the refrigerator, as opposed to the melon simple syrup, which will last 5-7 days.

Glasses

You can use a short glass, as shown, or a highball glass, too. The amount of ounces of club soda and dilution then depends on the size of your glass.

Ingredients
 

  • 1/2 cup ice cubes
