Watermelon Feta Skewers

Ingredients

  • 24 cubes of watermelon about ⅓ a medium watermelon
  • 8 ounces feta
  • 2 mini cucumbers 12 slices
  • 4 ounces cured meats - prosciutto salami
  • 12 large leaves of basil
  • 2 tablespoons balsamic reduction
  • ½ teaspoon kosher salt
  • 12 wooden skewers

Instructions

  • 1. Dice the watermelon and feta into 1-inch cubes. Use a mandoline to thinly slice the cucumbers lengthwise.
  • 2. Skewer the watermelon, then the meat, cucumber, feta, and basil, and finish with another piece of watermelon.
    (Fold the meat, cucumber, and basil just prior to skewering.)
  • 3. Arrange on a serving platter. Drizzle with balsamic reduction and a sprinkle of kosher salt over top. Serve immediately.

Notes

Serve as soon as assembled. Recipe does not keep well in the refrigerator for long periods of time. If needed, assemble about an hour before serving and store in the fridge. Then, add the balsamic reduction and kosher salt just before serving.
