This week we are Saving Summer with #SundaySupper. I am thrilled to be co-hosting this week with Stacy from Food Lust People Love, couldn’t have done it without you gal!! I have in the past done quite a bit of salsa, pickles, canned tomatoes, and a Classic Freezer Tomato Sauce. It is still a bit early for us to be doing all this, we usually do it later in August. So I decided to go to the farmer’s market and pick up some produce just to whip up a delicious sauce. You don’t need much for this, simple ingredients with farm-fresh produce are amazing!! I love going to the farmer’s market and so does my whole family. It is an afternoon outing!!
How your sauce turns out depends on your product. Sometimes the tomatoes are juicier, the pepper could be sweeter, the onions more potent, but it always makes a delicious sauce either way as everything balances itself out.
Making a larger amount of sauce always is a time saver and you have a delicious dinner ready for you in the freezer. My tip is to freeze the sauce in portions to suit your family in plastic zip bags. We had one serving last night over pasta. I am saving a larger amount to make fresh pasta and chicken lasagna and have two more bags in the freezer. When freezing them flat they take up no space in the freezer!!
I love my fresh herb garden in the summer and it is right at the back door of the kitchen. So easy to grab what you need!! I have tarragon, basil, flat-leaf parsley, curly-leaf parsley, oregano, thyme, dill, rosemary, and two different tomato plants. Love them all!!! Fresh herbs should be put in the sauce last and dried at the beginning. To avoid dark blackened bits in your sauce I put them in whole in bunches tied together and the basil by itself and then cook for 30 min. You can then take them out at the end. You have all the flavor from them with no black bits!!
Classic Freezer Tomato Sauce
Ingredients
- 10 lbs. roma tomatoes
- 2 Tbsp. olive oil more for garlic
- 3 white onions diced
- 1 each red yellow, green and purple pepper, diced
- 3 heads of garlic
- Salt and pepper to taste
- Fresh herbs like basil oregano and thyme
Instructions
- Place tomatoes, in bunches, into hot boiling water for 1 min. Continue until all are done. Gently cut the tops off and peel the tomatoes. Stick your thumb into the underside, away from yourself and into a bowl and squeeze out the juice. Continue until all tomatoes are peeled and juiced. Reserve the juice for drinking if you like, run through a sieve, salt and pepper and chill.
- Place onions and peppers into a large pot that is heated with the 2 Tbsp. of oil. Saute until tender. Chop the tomatoes and add to the pepper mixture. Salt and pepper to taste. Simmer for 1 hour without a lid, stirring occasionally.
- Meanwhile, slice the top of the garlic off exposing the cloves, drizzle with olive oil and wrap in foil. Bake for 60 min. in a 350 F or until cloves are soft and will squeeze easily out of the head.
- Add the roasted garlic to the sauce with a large sprig of basil. Tie three sprigs of thyme with three sprigs of oregano together. Place into the sauce and cook for another 30 min. Remove the herbs when done. Blend slightly with a hand immersion blender if desired.
- Let the sauce cool and divide amongst freezer bags. Freeze flat. Use on your favorite pasta or make into a lasagna etc.

Your herb garden looks amazing, Tara!!! I also love stepping outside to pick my own herbs. Our tomatoes are all ripening and I’m definitely planning on freezing some tomato sauce. I did it a few years ago and it was wonderful having that sauce in the middle of winter. I don’t know why I haven’t done it since! Yours looks beautiful!!!

Crazy as it is, I have never made my own tomato sauce with fresh tomatoes. But in the middle of summer, they taste so good I really should make them into sauce sometime. And now I have the perfect recipe for it!

What a beautiful herb garden! The tomatoes are at the end of their season here, so I may be able to pick up a big batch of tomatoes to make sauce next week. Last year I attempted to make it for the first time, but added too many extra veggies in that the kids complained it was too healthy. This looks like a better recipe for us!
