Watermelon Cucumber Cooler

Watermelon is the epitome of summer!! There is nothing like that juice taste of watermelon on a hot summer day. I was thinking of a nice refreshing summer sipper, something that you could enjoy in the shade as you sat and watched the grass grow. After a little while, I came up with this Watermelon Cucumber Cooler!  I also love the freshness of cucumber, and combined these two flavors to come up with this drink. You will love this on a hot summer day!!!

Recipe

Serves 4

4 cups watermelon, cubed
4 oz. Bacardi white rum
3 oz. simple syrup infused with cucumber
Soda Water or sparkling water
Watermelon and cucumber to garnish

Cucumber simple syrup
1 cup of sugar
1 cup of water
2 small cucumbers, grated

Place sugar and water in a small saucepan over medium-low heat and stir to dissolve sugar. Remove from heat and let cool slightly. Add the cucumber and pour the syrup into a sealed container and place it into the refrigerator to cool. Add the watermelon, rum, 3 oz. simple syrup into a blender and blend. Pour into  4 glasses with ice, top with soda water. Use extra watermelon and cucumber to garnish.

      Enjoy, if you don’t like rum you can change it up to vodka, that would be good in there too!

    This looks good. I think for my family, I would substitute the rum with some cub soda. I can see it at a family picnic served out of a airpot at the park.

    By the way, I think you have a beautiful header, with the fruits and vegetables. They are so colorful.

    What a beautiful drink this makes. It sounds like it would taste good. Melons and cucumbers are from the same family if I remember right, so they should blend well. I wonder what a cantalope and cucumber drink would taste like.
