Country Style Smashed Garlic Potatoes
Ingredients
- One head roasted garlic
- 1.5 lb. Terrific Trio Little Potato Company potatoes
- Salt and pepper
- 4 Tbsp. butter
- 1/3 -1/2 cup half and half cream
- Parsley to garnish
Instructions
- In a large pot of boiling salted water add the potatoes and boil for 15 min. or until tender. Remove from heat and drain. Squeeze the garlic head to extract the roasted garlic cloves. Mash the potatoes with the roasted garlic, butter, cream, salt and pepper. Serve garnished with parsley if you like and another dab of butter.

I make something similar but I add a good amount of sour cream when mashing the potatoes and then sprinkle the end result with some grated cheddar cheese and put in the oven for a few minutes just to melt the cheese and brown the top. Yummy.
