This Finnish Cucumber Salad/ Kurkkusalaatti was my mother’s recipe. It was the one thing she made a lot of during the summer. Mom wasn’t a cook. She hated being in the kitchen. She found the whole thing a big waste of time. I remember mom saying to me “I can’t believe you spend all that time in the kitchen and it is then eaten in 15 min”.
That was not her passion as it clearly is mine. She loved being in the garden. She would be there all day long and she had amazing gardens, winning many awards.
I remember her making this salad many times and we all loved it. It is light and refreshing and of course so easy to make. It is called Kurkkusalattti in Finnish.
My mom was from Finland and I still have lots of relatives there. You have to try this it is so good. Adjust the sugar to your liking. Kids, of course, enjoy it a little sweeter.
