This Frozen Lemonade Pie is a no-bake summer delight that will be ready and waiting for you on a hot day straight from the freezer.

When you think of summer, you think of lemonade, and this pie is both refreshing and tart. This light and fluffy dessert can be served right from the freezer or let it thaw first; both ways are amazing! In the summer, there is nothing better than an icebox pie.

Can’t get enough lemonade? Also, try our Pink Lemonade Cake or Chambord Frozen Lemonade. Or summer fun isn’t complete without our S’mores Cookies.

This Lemonade Pie is excerpted with permission from a fabulous new cookbook that we are sharing with you today, Cooking with JB and Jamie.

Royers Round Top Cafe has elevated home cooking for decades. Often when people hear something described as elevated, they think it will be hard to achieve, but JB and Jamie Royer have mastered the art of simple recipes packed with flavor and fun—the best two ingredients to bring family and friends together. The recipes in this cookbook deliver long-time Cafe favorites to your home so you can enjoy cooking good food for your own family and community, continuing to build cherished memories around the table.

JB and Jamie Royer are the Mayor and First Lady of Royers Round Top Cafe, a small-town Texas restaurant known for big flavors and lots of heart. When they’re not hosting cooking classes and wine dinners or
grilling steaks in the kitchen, they’re doing what they love most—chatting with the folks at the Cafe and making memories as good as the food.

What is in Lemonade Pie?

Ingredients for Lemonade Pie.

This is the simplest of pie recipes and makes for a favorite summer treat. Using frozen whipped topping and frozen lemonade concentrate makes your pie creamy and tart at the same time. It is a perfect combination for a frozen lemonade pie.

Lemonade Filling

8 oz. cream cheese (room temperature)

14 oz. can sweetened condensed milk

1 can of pink lemonade concentrate

8 oz. tub Cool Whip

1 lemon, sliced (optional))

Graham Cracker Crust

1 1/4 cups graham cracker crumbs

1/4 cup sugar

1/3 cup unsalted butter

How To Make Lemonade Pie

This fast and easy lemon pie takes only a few ingredients and comes together in minutes.

To make the graham cracker crust. Preheat the oven to 325F.

Crush graham crackers in a blender, or better yet, buy them already crushed. Easy peasy. Then there is no need for a blender, electric mixer, or any power appliance.

Mix together the crushed graham cracker crumbs, sugar, and butter.

Press into a 10″ pie plate. Bake for 10 minutes. Let cool completely.

To make the lemonade pie filling. Mix all ingredients together in a large bowl and pour the filling into the pie crust.

Freeze for 4-6 hours. Chill until ready to serve or serve from frozen.

Garnish with sliced lemon. You could also decorate with lemon zest, candied lemon pieces, or candy lemon.

How Long Does a Lemonade Pie Last?

You can keep Frozen Lemonade Pie in the freezer for up to 3 months if wrapped well with plastic wrap and foil. When it is this hard frozen, you will want to let it sit in the refrigerator for some time to thaw slightly, so it is easier to slice and serve.

Where to find the Royers

JB and Jamie on haystacks.

Located in tiny Round Top, Texas (population: 77), Royers Round Top Cafe is iconic. A funky, friendly, eclectic Texas institution and family-run restaurant famous for pie, pie, and more pie, as well as its menu of ‘sophisticated country comfort food’, Royers was voted “Best Country Cafe” in the state of Texas and
has been featured in the Houston Chronicle and USA Today, as well as on CBS Sunday Morning and the Food Network. Frequented by celebrities and a destination/foodie hot spot that sees visitors from hundreds of miles around, Royers ships its pies all over the world.
