We are doing another #SundaySupper today and I couldn’t resist joining in for this one as it is Libations, you know drinks, alcoholic bevies, cocktails but also any dishes made with alcohol. I love cooking with alcohol and I love making fun cocktails. I always do at least one cocktail for the site for the holidays. This one Ken and I invented together. He suggested Southern Comfort and I suggested pomegranate juice, there the Southern Pomegranate Sparkler was born.
I adore pomegranates for the holidays. They are bursting with bright red gems and are so very festive plus they are readily available and delicious!! I love serving a cocktail for a dinner party or holiday occasion. I think I have this one nailed for Christmas this year, I loved it. I have to admit I took pictures in the afternoon and didn’t try but a sip of the cocktail until supper time. By then the pomegranate seeds had soaked up a bit of the Southern Comfort flavor and were out-of-this-world yummy. I think I will do that and soak some in pomegranate juice and Southern Comfort before making the cocktail, it just added that extra boost of yumminess.
Southern Pomegranate Sparkler

What a beautiful and refreshing drink. 🙂 It’s summer where I live, and my pomegranates have just started growing. Can’t wait to try this when they’re ripe and ready to eat. 🙂

Bravo to your discipline manner of refraining from sipping this pomegranate beauty until supper. Bet those seeds were indeed comforts to the tummy, Tara =)

such a happy accident! Chia seeds do the same thing – soak up the liquid of whatever you put them in and I think boozy chia seeds could be the next cocktail trend! 🙂 this is great, and with SoCo! Such an underrated liquor! 😉
