Vanilla Pomegranate Mojito #BrunchWeek. Need a cocktail for brunch this weekend. Look no further than this outstanding libation!!! Mom, Dad, and everyone will love this.

In addition, it is quick and easy to make and if you leave out the alcohol the kids will like it too!! I got this recipe from my great friend Cheryl whose daughter is bartending until she goes back to school in the fall.

Ingredients
 

  • 1 oz. simple syrup equal amount of water and sugar simmered until clear and cooled
  • 1 oz. fresh lime juice
  • 1 oz. pomegranate juice
  • 10-12 mint leaves
  • 1 oz. vanilla vodka
  • Club soda
  • Ice

Instructions
 

  • Add the first 4 ingredients to a glass and muddle with a pestle.
  • Add vanilla vodka and ice, top with club soda.
