This was so good that we made it for company at Christmas time. But easy enough to make for your family for a Sunday dinner too. What kind of meat is braised short ribs? Short ribs are beef which is a more expensive cut from the rib area. They turn out amazing because of their tenderness with being braised and their flavor.
What Does it Mean to Braise Ribs?
To braise ribs means simply sear the beef first by browning it in oil. Then it is cooked in a small amount of liquid in a tightly covered pan, either on the stovetop or in the oven.
This long, slow cooking method makes the meat so tender and falling off the bone. To speed up this process we have used an Instant Pot instead.
This short rib recipe is easy to make and let us show you how.
How to Braise Short Ribs in an Instant Pot?
To braise short ribs in an instant is very easy. Set your cooker to saute and add the olive oil. Season ribs on all sides and in batches brown on all sides. Remove to a plate and set aside.
Replenish the olive oil as needed. Saute the medium onion and garlic.
Add in the carrots, celery, oregano, and rosemary. Continue to saute. This preparation process takes about 20 minutes.
Pour in the wine and deglaze the pan by scraping the bottom. Stir in the soy sauce, fish sauce, brown sugar, balsamic vinegar, and beef broth. Add the beef ribs back in and now pressure cook.
To finish the sauce, add cornstarch and water bring to a boil, and whisk until thickened. Serve the ribs with the sauce over mashed potatoes.
How Long Does it Take to Braise Short Ribs?
Normally braising is a very slow, long process but using the instant pot speeds that process up. With the traditional method, you would braise on the stovetop or oven for at least 2-3 hours. If done in a slow cooker it would take even longer, like 7-8 hours.
But with the Instant Pot you are done in just over an hour. That is perfect for serving company or for making a dish at the end of the day without too much forethought.
This meal is so amazing you will be stunned that you can make a restaurant-quality dish like this at home. The short ribs have a deep umami flavor from the added red wine, fish sauce, soy sauce, and balsamic vinegar. These are balanced off with a little brown sugar.
Ingredients for Braised Short Ribs
short ribs seasoned all sides generously with Kosher salt and freshly ground pepper
Olive oil for sauteeing
garlic

celery
red wine (full-bodied)
beef broth
balsamic vinegar
brown sugar
low sodium soy sauce
fish sauce
oregano
rosemary
Kosher salt and freshly ground black pepper
For the Sauce:
cornstarch
cold water
Can you Overcook Short Ribs?
I think the point is with short ribs that you need to cook them long and slow or in an Instant Pot as they otherwise will be tough to eat.
You can still overcook them as anything else and they will get stringy or dry out. The perfect method for us is in the pressure cooker and that will give you great results every time.
Braised Short Ribs {Instant Pot}
Ingredients
- 4 lbs. short ribs seasoned all sides generously with Kosher salt and freshly ground pepper
- Olive oil for sauteeing
- 6 tsp. minced garlic
- 1 medium onion chopped
- 2 large carrots chopped
- 2 ribs celery chopped
- 1/2 cup red wine full bodied
- 1/2 cup beef broth
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. brown sugar
- 1 Tbsp. low sodium soy sauce
- 1 Tbsp. fish sauce
- 2 tsp. oregano
- 2 tsp. rosemary
- Kosher salt and freshly ground black pepper
- For the Sauce:
- 6 Tbsp. cornstarch
- 6 Tbsp. cold water
Instructions
- In an Instant Pot set on saute add 1 Tbsp. olive oil; once the setting has reached hot add in as many short ribs but do not crowd the machine. Brown on all sides and remove. Repeat with the second batch of ribs and so on until all are browned. Replenish the olive oil as needed. Remove ribs and set aside.
- Saute onion and garlic for about 3 min. Add in the carrots, celery, oregano, and rosemary and saute for another 4 min.
- Pour in the wine and deglaze the pot by stirring and bringing up the browned bits. Simmer for 1-2 minutes.
- Stir in the soy sauce, fish sauce, brown sugar, balsamic vinegar, and beef broth.
- Add the beef ribs back in and pressure cook for 45 minutes on high. It will take about 10-12 minutes to come to pressure. Then natural release for 15 min.
- Remove the ribs carefully from the Instant Pot and bring the sauce up to a boil. Mix the cornstarch and water together. Add the cornstarch mixture to the sauce
slowly while whisking stopping to let it thicken. Continue to add the cornstarch until the desired thickness. - Season well with Kosher salt and black pepper.
- Serve over your favorite creamy mashed potatoes.

Your narrative directions may be a bit confusung. You talk about setting the IP to Saute, then switch to talking g about braising. While one eventually does braise the short ribs the initial step I searing not braising. It appears that in your actual recipe in Step 1, you got it righf. Yes, I may be a bit picky but if you’re putting forth a recipe for other to use, you should be using the correct terminology.

I am not quite sure what you are referring to, I think it is pretty easy to follow, I used the word cook but have changed it to sear. I was explaining what braising means. You first cook/sear the meat and then add liquid which is then braising.

Absolutely deliscious. Doubled the ingredients for the liquid in the pot so I’d have more sauce. 1.5 times the cornstartch and water at the end. I did not have fish sauce so I used oyster sauce.
