It is cookbook review day at Noshing With The Nolands. Today I have a unique cookbook for you, one that will help out so many with learning difficulties or small children wanting to learn what the kitchen has to offer. The cookbook is Special Day Cooking, a life skills cookbook. This cookbook is geared towards developmentally-challenged individuals. From this cookbook I chose to share with you today, Chicken Orzo Soup. Not only it is very simple to make but it is delicious!
The recipes are designed for those with autism, down syndrome, ADHD, ADD and other developmental and learning disabilities, but all young people will also enjoy this book. All of the recipes are in large type and are formatted the same with easy-to-follow instructions. They are also safe with only the microwave, toaster, blender and a plastic knife to cook with. Plus all the recipes can be completed in less than a hour. This is how I got into blogging myself after teaching my daughter and her friends how to cook at a young age. It is so important for everyone to be comfortable in the kitchen.
I strongly believe that cooking is a necessary life skill that everyone needs to know. When a person has accomplished a recipe, even an easy one, up goes their self-esteem and self-confidence. The cookbook covers recipes like this one I am sharing with you today plus even easier ones like Cinnamon Toast, Crispy Bacon or Scrambled Eggs. There are recipes from breakfast through to dessert. More recipes like Pasta and Peas with Alfredo Sauce, Crunchy Cole Slaw, Chocolate Pudding Pie, Orange Shake and so many more, over 60 recipes in total.
Wholesome and easy ingredients that everyone loves are in this soup!
Chicken Orzo Soup
Ingredients
- 1 32 oz. containter chicken broth
- 1 5oz. container chopped carrots, celery and onion
- 1/4 cup orzo Italian rice
- 1/2 cup frozen peas
- 1 cup cooked chicken about 1 chicken breast
Instructions
Gather Equipment
- Microwave
- large microwave-safe bowl (or pasta cooker)
- wooden spoon
- Dry measuring cups
- plastic knife (Be safe: cut with a plastic knife)
- cutting board
- soup bowls
- soup ladle
- pot holders
Cooking Directions
Begin Making Soup
- Open the container of chicken broth.
- Pour broth into large microwave-safe bowl or pasta cooker.
- Add the container of chopped carrots, celery and onion to chicken broth.
- Stir soup with wooden spoon.
Cook Soup
- Microwave soup 15 min. Do Not Cover.
Prepare Orzo, Peas and Chicken "while broth and vegetables are cooking"
- Measure 1/4 cup orzo in dry measuring cup. Set aside.
- Measure 1/2 cup frozen peas in dry measuring cup. Set aside.
- Cut 1 cup cooked chicken breast into small pieces on cutting board. Set aside. Be safe: cut chicken with a plastic knife.
Add Orzo, Peas and Chicken
- Remove soup from microwave with pot holders. Sitr soup with wooden spoon.
- Add orzo, peas and chicken pieces.
- Stir soup with wooden spoon.
Cook Soup
- Microwave soup 15 min. Remove soup from microwave with pot holders.
- Stir soup with wooden spoon.
Serve Soup
- Ladle soup into 4 soup bowls
- ENJOY!
When you finish cooking.
- Put your ingredients and equipment away.
- Wash and put your dishes away.
- Wipe your cooking area clean.
About the author: Beverly Worth Palomba, moved from Massachusetts to the San Francisco Bay with her family and changed careers from the computer industry to her real love, education. She has taught for the past 20 years from Pre-K to high school but for the last 11 years focusing on special education. She started a life skills cooking class four years ago at the local high school geared towards her students.
