French Bistro Salad is a light, refreshing bite to cut through rich chicken or beef based meals. Our version is packed with a mix of lettuces, cucumber, a bit of red onion, fresh herbs and a tangy lemon vinaigrette. Whether you’re serving it alongside a cozy French dinner, enjoying it for lunch, or entertaining guests, this beautiful salad brings a little taste of Paris to your table!

It is traditionally served in a Bistro with dishes like Deep Dish Quiche, Coq au Vin or Boeuf Bourguignon.

What Is a French Bistro Salad?

A French Bistro Salad is a simple, fresh salad inspired by the traditional green salads served in French cafés and neighborhood bistros. Often called salade verte, this classic salad typically features tender lettuce dressed with a flavorful vinaigrette made from Dijon mustard, vinegar, olive oil, and seasonings.

Why I Love This Recipe

Ingredients for French Bistro Salad Recipe

Ingredients to make a french bistro salad.

This easy French Bistro Salad features crisp greens and a tangy Dijon vinaigrette. A fresh, elegant French-inspired side dish for any occasion!

Recipe Ingredients

Salad

Mixed greens – A mix of lettuces gives you a light, leafy base that soaks up the dressing just right. Also see below for food selections.
Red onion – Slice it thinly so you get a little sharp bite without overpowering the salad. We also like to soak the onion so it mellows it a bit.
Cucumber – It adds a cool, fresh crunch that I love.
Fresh dill and chives – They bring a bright flavor that complements the lemon vinaigrette well.
Flaky sea salt – A pinch on top right before serving.
Black pepper – Freshly cracked pepper adds a gentle kick to finish the salad.

Lemon Vinaigrette

Fresh Lemon juice – Fresh lemon juice is the star here, so avoid using bottled juice.
Lemon zest – The zest packs in extra lemon flavor.
Dijon mustard – Dijon adds a little tang and makes the dressing smooth.
Honey – Just a touch balances out the lemon and mustard with a hint of sweetness.
Fine sea salt and ground black pepper – They help to enhance the ingredients in this vinaigrette.
Extra-virgin olive oil – Use a good one, since it’s the base in this simple vinaigrette.

What Lettuce Is Best for French Bistro Salad?

Butter lettuce is one of the best choices for a classic French Bistro Salad.

Its tender leaves, mild flavor, and delicate texture work beautifully with Dijon vinaigrette.

Other delicious options include:

  • Bibb lettuce – Soft, tender leaves with a delicate flavor.
  • Boston lettuce – Mild and buttery with a lovely texture.
  • Little gem lettuce – Crisp, sweet, and slightly more substantial.
  • Frisée – Adds a lightly bitter flavor and beautiful texture.
  • Spring mix – A convenient combination of tender baby greens.
  • Arugula – Adds a peppery bite for a more assertive salad.

For the best results, choose fresh, crisp greens and dry them thoroughly before dressing.

How to make French Bistro Salad

Soaking red onion in cold water.
Mkixing lemon vinaigrette ingredients.
Mixed lemon vinaigrette.

Soak the sliced red onion in a bowl of cold water for 10 minutes, then drain and pat dry. This takes the harsh edge off and leaves it sweet and crisp.

Add the vinaigrette ingredients to a small jar, close the lid and shake it until it emulsifies.

Taste and adjust. It should be sharp enough to make you notice; the greens will soften it considerably. Add salt or a splash more vinegar as needed.

Wash and dry the greens thoroughly. Water clinging to the leaves keeps the dressing from sticking and pools at the bottom of the bowl. A salad spinner is worth using here, followed by a few minutes on a clean towel.

Combine the greens, onion, cucumber, chives, and dill in a wide bowl. Drizzle over about two-thirds of the vinaigrette and toss gently with your hands, lifting from the bottom, until every leaf is lightly coated.

Taste a leaf and add more dressing if it needs it. Finish with flaky salt and a few cracks of pepper, and serve right away.

Recipe Pro Tips

Tips for a great French Bistro Salad

  • Dry your greens well: this is the single biggest difference between a good bistro salad and a soggy one.
  • Toss gently with wooden spoons instead of using tongs to avoid bruising the greens.
  • Add the dressing just before serving to keep the lettuce from wilting.

How to Store French Bistro Salad

This salad is best enjoyed right after you toss it, since the greens start to wilt once the dressing hits them. If you want to prep ahead, just keep everything separate. Store the greens in an airtight container lined with a paper towel to soak up extra moisture, and they’ll stay fresh for 3 to 4 days in the fridge. Then, the lemon vinaigrette keeps in a sealed jar in the fridge for about a week.

Ingredients

Salad

  • 8-10 oz bag of mixed greens
  • ½ small red onion very thinly sliced
  • 1 small cucumber
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh chives chopped
  • Flaky sea salt and black pepper to finish

Lemon Vinaigrette

  • 3 tbsp fresh lemon juice about 1 large lemon
  • 1 tsp finely grated lemon zest
  • 2 tsp Dijon mustard
  • 1 tsp runny honey
  • ½ tsp fine sea salt
  • ¼ tsp black pepper freshly ground
  • 3 tbsp extra-virgin olive oil

Instructions

  • Soak the sliced red onion in a bowl of cold water for 10 minutes, then drain and pat dry. This mellows its sharp bite and keeps it crisp.
  • Add the vinaigrette ingredients to a small jar, close the lid, and shake until the dressing looks creamy and well blended.
  • Taste and adjust. It should taste a little sharp, since the greens will mellow it out. Add more salt or a splash of lemon juice if needed.
  • Wash and dry the greens really well. Any water left on the leaves keeps the dressing from sticking and pools at the bottom of the bowl. A salad spinner works best, followed by a few minutes on a clean towel.
  • Add the greens, onion, cucumber, dill, and chives to a large, wide bowl. Drizzle about two-thirds of the vinaigrette over the top and gently toss with your hands, lifting from the bottom, until every leaf is lightly coated.
  • Taste a leaf and add more dressing if needed. Finish with flaky salt and a few cracks of black pepper, and serve right away.
