I love potato salad anyway I can get it, but sometimes you want to lighten things up and not have a heavy mayo laden potato salad. This is why I made this Herbed Potato Salad {No Mayo}; lightening up the dressing is not only healthier but also lets the gorgeous Little Potato Company’s Fingerling Potatoes shine through. A lovely combination of herbs like dill, parsley and basil liven up the earthy fingerling potatoes.

See how gorgeous this simple potato salad is? This is perfect as we make our way into spring with all it’s freshness. Adding fresh herbs is one of my favorite things to put into dishes. Such few calories and so much flavor!
You can make this simple potato salad tonight. Your family will love you for it. Little Potatoes are so easy to use as they come already pre-washed and never need any peeling. They go from the bag to pot and cooked in 15 min. I added a little white wine while the potatoes were still warm so that the flavor soaked in. The rest of the ingredients were then mixed and added with a quick toss. You can then serve these potatoes right away while they are still warm or let them come to room temperature. You can also refrigerate if made ahead of time but let them come back up to room temperature before serving.
The Recipe
Herbed Potato Salad {No Mayo}
Ingredients
- 1 1/2 lbs. Little Potato Company’s Fingerling Potatoes
- 2 Tbsp. good quality white wine
- 2 Tbsp. white wine vinegar
- 1/2 tsp. Dijon mustard
- 1 tsp. Kosher salt or to taste
- Freshly ground black pepper to taste
- 6 Tbsp. good olive oil
- 3 small scallions minced
- 2 Tbsp. each fresh dill parsley and basil, minced
Instructions
- Bring a large pot of salted water up to a boil. Add the potatoes and cook for 15 min. Drain and allow to cool until you can handle them. Cut into thirds and place into a bowl. While still warm add the white wine and toss gently. The potatoes will soak up the wine.
- Meanwhile, mix the vinegar, oil, mustard, salt and pepper in a jar and shake vigorously. Pour the dressing over the potatoes, add the herbs and scallions and toss. Add more salt and pepper if desired. Serve warm or at room temperature. Can be refrigerated and brought back up to room temperature before serving.

I can understand the frustration of the previous poster. I always look for the comments of someone who has made it to help decide if it is worth trying. That said, I did just make this, and it is a good, simple, quick potato salad recipe. I added extra mustard just to kick it up a it, and used the herbs that I have growing right now. I will make it again. Thank you for something different.

I just made this recipe and it was absolutely the best potato sald I’ve ever made, eaten or seen in my entire life. I doubled the recipe, added more mustard and skipped the basil so if you actually can cook and not just criticize I’d recommend those edits.

I made this and the taste was great, but it was overloaded with olive oil and herbs. After mixing everything together, I the fishes out the potatoes with a slotted spoon and put them in another bowl. I’d double the potatoes or reduce the olive oil:herbs by half.
