What is in this Chicken Salad Recipe?
This makes a great chicken salad sandwich recipe or just a classic chicken salad. The ingredients are simple; the results are delicious. Two different kinds of onions and celery give a nice crunch to the salad. The dressing combines it all and gives it the perfect punch of flavors. This is one of our favorite things for an easy lunch with leftover chicken.
Ingredients
Shredded chicken, rotisserie chicken, or chicken breasts – Lots of times, we use leftover chicken, and in the morning just cook up some hard-boiled eggs.
Hard-boiled eggs, chopped – This ingredient really adds a lot to the salad. Egg salad is one of my favorites also, so together, it is wonderful.
Celery, finely chopped – Celery adds the needed texture to the salad.
Green onions, sliced – Two kinds of onions are used to give the extra crunch and flavor.
Red onion, finely chopped – Make sure to finely chop these so they aren’t too spicy.
Mayonnaise or plain Greek yogurt – I do prefer mayo for this recipe, but the yogurt, if used, does add a nice tang and is a healthy option.
Dijon mustard – It gives the salad the perfect jolt, don’t omit it.
Salt – Don’t oversalt; just a little goes a long way.
Lemon juice – This livens up all the ingredients and makes them taste even better.
Garlic powder – You can use granulated garlic, too, which can be a bit milder.
Paprika – This gives the salad a lovely color and even more flavor.
To serve: fresh bread slices – If you are making a sandwich, use really good quality bread.
How to Make Chicken Salad Recipe with Eggs
Does chicken salad contain boiled eggs? This traditional chicken salad has the addition of egg which, in my opinion, just adds so much more to the salad. It is easy to make for so many occasions and something that everyone loves too.
Prepare the shredded chicken
If you’re using rotisserie chicken or chicken breasts, you just need to shred it using a fork and knife into thin strips or chop it into very small cubes.
Follow this step if you’re making your own poached chicken. Fill a medium-sized saucepan with water and the chicken breast. Bring it to a boil over high heat and then reduce heat to simmer for 10-12 minutes or until chicken breasts are cooked through. Then, use a knife and a fork to pull the chicken meat apart.
Making the Salad
Place all the ingredients into a large mixing bowl and mix until well combined.
Taste and add more salt if needed. Then, refrigerate it for at least one hour before serving.
