I come from a long line of the bog-Irish and was brought up by my grandmother who was not much of a cook, but really knew what she was doing when it came to potato pancakes and potato scones. Unfortunately none of us thought to watch her make them (of course she never used a recipe) so we haven’t been able to replicate them.
