Oh Tara, what a fab collection of delicious dishes. I’m afraid we never enjoyed such variety in our house.
I come from a long line of the bog-Irish and was brought up by my grandmother who was not much of a cook, but really knew what she was doing when it came to potato pancakes and potato scones. Unfortunately none of us thought to watch her make them (of course she never used a recipe) so we haven’t been able to replicate them.
I’ll be giving your recipes a try to see how close they are to them!

Your story is very similar to mine. When I asked my Irish grandmother for the recipes she said she didn’t have one, that is was just a handful of this and mouthful of that! Sound Irish to you? I think I have come close to her recipes. They taste like hers when I close my eyes and think of her.
