You are going to love this BBQ Chicken Tostadas recipe! With a familiar “South of the Border” flavor, these wonderful crispy tostadas are going to have you wishing for a margarita! They are super easy to make and are perfect for a quick weeknight dinner. 

This is a dinner that you can have on the table for your family in less than 20 minutes. Look for some more Mexican-inspired recipes for your family. Using cooked rotisserie chicken from the grocery store for the shredded chicken just makes so much sense. Plus, it’s quick and easy, which makes this easy dinner a breeze!

What goes into BBQ Chicken Tostadas

Honestly, there is a pretty short list of simple ingredients that go into making these BBQ chicken tostadas. That said, your list of toppings may be much longer, depending upon your tastes. Your toppings can include cilantro, refried beans, sour cream, pico de gallo, black beans, pickled jalapenos, diced tomatoes, salsa, and sliced avocado!

Ingredients

Shredded rotisserie chicken

BBQ sauce

Red onion

Colby Jack cheese

Store-bought tostadas shells

Optional toppings: cilantro, refried beans, sour cream, pico de gallo, black beans, pickled jalapenos, diced tomatoes, salsa, and sliced avocado!

You would think these taste amazing… but they are even better than imagined! The combination of the bbq sauce with the chicken, cheese, and red onion is the perfect match.

Add your favorite taco toppings, and it sends these tostadas over the top! 

I used Sweet Baby Ray’s bbq sauce but use your favorite sauce. I suggest using a sweet bbq sauce as the sweetness plays well with the other ingredients.

How To Make Chicken Tostadas

Start by preheating your oven to 350 degrees F. Line a baking sheet with parchment paper, set it aside. In a medium-sized bowl, mix the shredded chicken with the bbq sauce until coated. Then add the slices of red onion and ½ of the grated cheese, stir to combine.

Spread the tostadas onto the prepared sheet tray. Evenly divide the chicken mixture onto the tostadas. Then top with the remaining grated cheese.

Once your oven is preheated, bake your chicken tostadas for 8-10 minutes. You want the chicken to be warmed through and the cheese to be melted and gooey.

Add a drizzle more of the bbq sauce on the top of each of the baked tostadas. Now it’s time to go wild by adding any or all of your favorite toppings to your tostadas.

How To Cook Chicken for Tostadas

For a quick and easy weeknight meal, I recommend using a grocery store rotisserie chicken. But if you have the time and, like us, often have a chicken breast in the freezer, that works just as well!

Cook the chicken breast either on your grill or in a frying pan. If you like, you can season it with a little taco seasoning or simply with a little salt and pepper. Allow the chicken to cool slightly before you shred it for your tostadas.

What Is The Difference Between Taco and Tostada?

The main difference is that tacos are usually a crispy U-shaped corn shell or a soft corn tortilla, but they can also be a flour tortilla. Tostadas are flat and made of a crispy corn tortilla shell.

Both tacos and tostadas are versatile when it comes to fillings and topping. You can use anything from beef to pork to fish in either your tacos or your tostadas. One of the best fish tacos I have ever had was at a roadside taco stand in Ensanada, Baja California; they were amazing!

What Do You Eat With Tostadas?

Tostadas pair nicely with a variety of food. Because the tostadas have both a protein and carb component, it’s a great idea to add some veggies to make it a well-rounded meal for the family.

A fresh salad with lots of crisp veggies like peppers and cucumber would be great. You don’t have to spend a lot of time on your side dishes. For a weekday meal, I like to cook up some frozen vegetables; peas, corn, or green beans are an excellent choice.

Ingredients
 

  • 2 cups shredded rotisserie chicken
  • 1/4 cup bbq sauce plus more for serving
  • 1/4 cup thinly sliced red onion
  • 1 cup shredded Colby Jack cheese divided
  • 6 tostada shells
  • Toppings of your choice: diced avocado diced tomato, sour cream, salsa, chopped cilantro, etc.

Instructions
 

  • Preheat the oven to 350°F. Line a sheet tray with parchment paper, set aside.
  • In a medium-sized bowl, mix the chicken with the bbq sauce until coated.
  • Add the red onion and ½ cup of the cheese, stir to combine.
  • Lay the tostadas onto the prepared sheet tray. Evenly divide the chicken mixture onto the tostadas.
  • Top with the remaining cheese and bake for 8-10 minutes until the chicken is warmed through and the cheese is melted.
  • Add a drizzle more of the bbq sauce, and then add your favorite toppings on top.
  • Enjoy!
