Whatever the reason I want to be out there with Ken creating great recipes with a wonderful smoky flavor this spring and summer!! Bring on the heat!!
I love the setup in Fire Masters, if you have never seen this show you have to take a look. A lot of the time they are cooking right on an open flame, an open pit BBQ. Sometimes even throwing veggies directly in with the wood to char.
This Little potato recipe then came to mind with watching the many shows and the many recipes created.

We love making cheesy yummy Breakfast Home Fries using The Little Potato Company’s Creamer Fingerling potatoes too. They are like homemade fries at their best.

If you have a flat part of the fire or a grill to place on a fire you can easily cook with a cast iron pan.

How to Make Home Fries in a Cast Iron Skillet
These are very easy to make following these simple pictures!! First the Creamer potatoes are sliced in half and returned to the easy-to-cook-and-serve tray. As per instructions 2 tablespoons oil is added and half the package of seasoning. I like to use olive oil.
Even though the Little potatoes aren’t in a single layer they still turn golden brown as long as you flip the potatoes.
They are roasted on the fire or grill for 30-40 min. or until crispy and tender. Then I placed them in a large cast iron pan (you can keep them in the easy-to-cook-and-serve tray) and added the rest of the seasoning package.
Cheese curds were broken up and added next followed by 1 cup of medium cheddar grated. The last step is the bacon lardons and back on the grill it goes to melt the cheese.
A sprinkle of green onions and you are off serving these fantastic Creamer Potato Little Campfire Home Fries. Who is not going to love these!!
You could make these your own with some jalapenos, roasted red peppers, hold the bacon and add some cooked sausage. The list can go on and on!!
Do you Have to Boil Potatoes Before Frying Them?
Using Little potatoes doesn’t require any extra time but the 30-40 min. to roast them on the grill, that is the beauty of using these Creamer potatoes.
There is no need to be boiling the Little potatoes ahead of time. Medium high heat on the BBQ works great for roasting Little potatoes.
They come pre-washed, no peeling required either and you are ready to go! You don’t even have to cut them in half if you don’t want to, they roast beautifully whole also.
Serve these right out of the cast iron pan or easy-to-cook-and-serve tray is the best! Less dishes is what you want with camping or summer cooking.
And when you have a BBQ or grill who wants to be turning the oven on and heating the house up!
You still want a great home cooked meal though when you are camping and comfort foods like this can’t be beat in making your vacation feel special.
This makes a hearty side dish or a meal onto its own.
The addition of the cheese curds just adds to the melty gooey goodness of this dish. Kids will be nuts for this equally as adults.
The flavoring of the Roasted Red Pepper and Onion seasoning pack from The Little Potato Company is just perfect with this recipe but they also have Garlic Herb and Onion and Chive.

Can You Reheat Home Fries?
You sure can reheat home fries. Sometimes flavors meld with sitting and they are even better the next day.
There is nothing like a quick hot breakfast to get the chill out of your bones quickly early in the morning when camping.
Throw an egg into the same pan and get it all heated up again!! I know you are going to enjoy these as much as we do.
Campfire Home Fries
Ingredients
- 1 lb. The Little Potato Company’s Roasted Red Pepper and Onion Oven|BBQ Ready Pack
- 2 Tbsp. olive oil
- 4 slices thick cut bacon cooked crisp and cut into lardons
- 1/2 cup cheese curds torn apart if large
- 1 cup medium cheddar cheese grated
- 3 green onions chopped
Instructions
- Slice the Little potatoes in half if desired and place back into the easy-to-cook-and-serve tray. Season with 1/2 the seasoning pack that is included. Drizzle with 2 Tbsp. olive oil and toss.
- Roast on a medium high grill or campfire for 30-40 min. or until golden brown and tender.
- Keep them in the same easy-to-cook-and-serve tray or transfer to a cast iron pan. Toss with the remaining seasoning.
- Top with the cheese curds, cheddar cheese and bacon. Heat on the BBQ until cheese is melted.
- Top with green onion and serve.
