Eton Mess is a beloved British dessert that’s as beautiful as it is delicious. This Easy Eton Mess Recipe is made with juicy fresh strawberries, blackberries, raspberries, crisp meringue pieces, and lightly sweetened whipped cream with a secret; this easy no-bake dessert comes together in just minutes. The combination of creamy, crunchy, and fruity textures makes it an elegant yet effortless treat that’s perfect for summer picnics, BBQs, afternoon tea, or holiday celebrations.

What is Eton Mess Recipe?

Eton Mess is a traditional English dessert believed to have originated at Eton College. It consists of broken meringue cookies folded into freshly whipped cream and strawberries, creating a delightfully “messy” dessert with a wonderful balance of crisp, creamy, and juicy textures. Despite its simple ingredients, it’s an elegant dessert that’s become a summertime favorite around the world.

What is Eton Mess Made of?

Ingredients.

Some of the Eton Mess recipes have you mixing all the ingredients together. I have tried this and much prefer the divided and layered ingredients as you see here.

Ingredients

Strawberries – Lovely fresh strawberries with some of them pureed with icing sugar that you add to the rest of the berries.

Icing sugar – This needs to be divided. It is also called Confectioners’ sugar or Powdered sugar.

Seasonal berries – Such as raspberries, blackberries, blueberries, whatever looks good.

Heavy cream – This adds the whipped creaminess to the dessert.

Plain Greek yogurt – I like to add this as it puts some tang into the whipped cream and adds dimension to it.

Store-bought meringue nests – Coarsely crumbled, you will use one per glass or 3 of the small meringue-sized cookies. Also depends on the size and shape of your glass.

Additional Berries and mint leaves – For garnish.

How to Make Eton Mess Recipe

Berries cut up.
Strawberries pureed.
Berries and puree in a bowl.
Berries mixed.

Place 150 g (5 oz) of strawberries in a blender with 1 -2 tbsps. of icing sugar (depending upon the sweetness of the strawberries). Pulse to form a smooth puree. Halve or quarter the remaining strawberries and other berries, if using, into bite-size pieces as needed. Place the pureed strawberries and the cut berries into a bowl and gently mix.

Whipped cream.
Yogurt added.

Whip the heavy cream and remaining 1-2 tbsps. of icing sugar together until soft peaks form. Gently fold in the Greek yogurt.

To assemble the Eton Mess, start by adding some of the crumbled meringue into the bottom of 6 glasses, maybe to equal one cookie or more depending on your glass. Next, divide about 1/2 the berries into the 6 glasses and top with about 1/2 the whipped cream yogurt mixture. Followed by more meringues if desired.

Repeat, finishing with remaining large crumbled meringue pieces, whole berries, and mint leaves on top; serve immediately.

  • Chill your mixing bowl and beaters before whipping the cream for the fluffiest results.

Frequently Asked Questions

Can I make Eton Mess ahead of time?

You can prepare the strawberries, whip the cream, and break up the meringues ahead of time, but assemble everything just before serving to keep the meringues from becoming soggy.

Can I use frozen strawberries?

Fresh strawberries are recommended for the best flavor and texture. If using frozen berries, thaw and drain them well before serving and use them for the puree only.

What kind of meringues should I use?

Homemade or store-bought crisp meringue cookies both work beautifully in this recipe. My local bakery has them in logs, but you can find them in cookie sizes and nests too.

How do I store leftovers?

Eton Mess is best enjoyed immediately. Leftovers can be refrigerated for up to one day, though the meringues will soften considerably.

  • 600 g 21 oz. strawberries
