Have you tried pesto on your pizza before? We love using it on our pita bread pizzas instead of tomato sauce; it just adds so much more flavor. We use both red pesto and green pesto and buy it store-bought or homemade. Both are excellent on this type of pita pizzas. I think to call it a pizza you have to have some sort of sauce and cheese.
If you want to add protein to the pizzas, cooked shredded chicken works great. I try to stay away from a cheddar or mozzarella cheese to keep these pitas lighter and healthier. Both feta and Parmesan work great.
Ingredients
Pita bread
Red tomato pesto (you can also use green pesto)
Cherry tomatoes halved
Fresh baby spinach
Kalamata olives, sliced
Feta cheese, crumbled
Parmesan cheese
Olive oil for drizzling
Fresh ground pepper to taste
How to Make Pita Pizza
This recipe is so simple you will want to have it in your repertoire to make it again and again. We certainly love it and change it up to what we have on hand or what is fresh at the grocer store too. Let me show you how easy it is.
Preheat your oven to 350 Degree F.
Divide the pesto evenly between the 4 pitas spreading it out like pizza sauce.
Divide the halved cherry tomatoes evenly between the 4 pitas.
Cover each pita with the fresh baby spinach and the sliced Kalamata olives.
Divide the crumbled feta cheese evenly between the 4 pitas, do the same with the grated parmesan cheese.
Drizzle the top of each pita with olive oil and add fresh ground pepper to taste.
Carefully transfer the pitas to a baking sheet pan.
Bake in a preheated 350 degree F oven for 14 – 16 minutes. Bake until heated through and cheese is melted.
Using a pizza cutter, slice each pita into quarters. Each pizza is considered one serving.
Serve warm with or without a salad.
Is Pita Pizza Healthy
Pita is a big carb and if you are okay with that, then keep your toppings healthy. Don’t add a bunch of high-fat meats or cheeses. Stick with vegetables like spinach and a few additions for flavor like olives. Keep the higher calorie toppings to a minimum. A little goes a long way for toppings on this pizza.
