You could substitute crumbled breakfast sausage and any kind of cheese you like in these slider buns. You can eliminate the cheese mixture and add sliced cheese or substitute cheddar cheese in the filling for the Monterey Jack. Make them how you like.

Sweet dinner rolls, attached (like Hawaiian rolls)
Cooking spray
Filling:
Cooked bacon, chopped
Monterey Jack cheese
Cream cheese, softened
Mayonnaise
Garlic powder and onion powder

Everything bagel seasoning*
Grated parmesan cheese
Large eggs, scrambled
Pinch of Kosher salt and fresh ground pepper

Okay, let’s get started on how to make these Hawaiian roll breakfast sliders. They are going to become your new favorite breakfast item. A complete breakfast in one bite. As long as you have everything ready for this recipe, the assembling won’t take you longer than 25 minutes to build and bake.
How to Make Breakfast Sliders
Preheat oven to 350 degrees F.
Place the rolls in a baking dish, 8×11″ sprayed with cooking spray.
With a serrated knife, carve out a wide circle on the top of each of the buns. You want to leave about ½ of the bread at the bottom of each bun (the bottom needs to be intact, so don’t cut all the way through the bun to the bottom).
Pull out the plug of bread that you just cut, and press down on the bottom and sides of the bun with your fingers to make room for the filling.
Evenly divide the crispy chopped bacon between the recesses of the buns.
In a medium bowl, combine the grated Monterey Jack cheese, cream cheese, mayonnaise, garlic powder, and onion powder. Mix until everything is blended well.
Spoon the mixture into the recesses of the buns dividing it evenly between all the buns.
Top the buns with the melted butter, and evenly sprinkle the everything bagel mixture and the grated parmesan cheese over the buns.
Bake in the preheated oven for 15-20 minutes or until the cheese is melted and the tops are golden brown.
Remove the buns from the oven and cook the scrambled eggs.
Mix the eggs in a large bowl; add a pinch of Kosher salt and fresh ground pepper to taste. Pour into a large skillet or non-stick pan coated with cooking spray.
Cook over low heat, stirring constantly until the eggs are just cooked; you want them to still be very soft (careful not to overcook).

Yes, we have made the buns up to the scrambled eggs before baking the buns and have frozen them for future use. Make sure to cover the buns tightly in the casserole.
I recommend freezing them right in the casserole you will bake them in. Then defrost and bake as you would, top with scrambled eggs, and serve.
