I love potato salad anyway I can get it, but sometimes you want to lighten things up and not have a heavy mayo laden potato salad. This is why I made this Herbed Potato Salad {No Mayo}; lightening up the dressing is not only healthier but also lets the gorgeous Little Potato Company’s Fingerling Potatoes shine through. A lovely combination of herbs like dill, parsley and basil liven up the earthy fingerling potatoes.
Little Potato Company have so many varietals to make any soup, salad, side dish or entree fantastic! They are also little power houses of nutrition. Per serving they have 19% potassium, 12 % fiber, 8 % iron, 6% Vitamin C and are naturally gluten free. Plus, they are naturally fat-free, cholesterol-free, and sodium-free. Pretty amazing in something that is so delicious tasting too!
See how gorgeous this simple potato salad is? This is perfect as we make our way into spring with all it’s freshness. Adding fresh herbs is one of my favorite things to put into dishes. Such few calories and so much flavor!
You can make this simple potato salad tonight. Your family will love you for it. Little Potatoes are so easy to use as they come already pre-washed and never need any peeling. They go from the bag to pot and cooked in 15 min. I added a little white wine while the potatoes were still warm so that the flavor soaked in. The rest of the ingredients were then mixed and added with a quick toss. You can then serve these potatoes right away while they are still warm or let them come to room temperature. You can also refrigerate if made ahead of time but let them come back up to room temperature before serving.
The Recipe
Herbed Potato Salad {No Mayo}
Ingredients
- 1 1/2 lbs. Little Potato Company’s Fingerling Potatoes
- 2 Tbsp. good quality white wine
- 2 Tbsp. white wine vinegar
- 1/2 tsp. Dijon mustard
- 1 tsp. Kosher salt or to taste
- Freshly ground black pepper to taste
- 6 Tbsp. good olive oil
- 3 small scallions minced
- 2 Tbsp. each fresh dill parsley and basil, minced
Instructions
- Bring a large pot of salted water up to a boil. Add the potatoes and cook for 15 min. Drain and allow to cool until you can handle them. Cut into thirds and place into a bowl. While still warm add the white wine and toss gently. The potatoes will soak up the wine.
- Meanwhile, mix the vinegar, oil, mustard, salt and pepper in a jar and shake vigorously. Pour the dressing over the potatoes, add the herbs and scallions and toss. Add more salt and pepper if desired. Serve warm or at room temperature. Can be refrigerated and brought back up to room temperature before serving.

I replaced the white wine with lemon juice. Added a fresh spark that paired well with the herbs. One note. This potato salad, like revenge, is a dish best served cold. Enjoy!

Yum! Made this to have with our dinner this evening. It was a perfect complement to a roasted chicken thigh and green salad.

So glad you like it, it is nice alternative to a traditional mayo potato salad.

So I just made this potato salad; after reading the comments I added a little more Dijon mustard, I would cut back on the olive oil by a 1tblsp (or add more potatoes) and at the end I squeezed some lemon juice. I also added thinly sliced celery for crunch. Sampling a small bowl topped with orange grape tomatoes and baby shrimp. I think next time I’ll add some chilli flakes. Allowing the reminder of salad to stand to infuse all those flavours..
Thanks for the recipe…

I made the salad as per recipe and everyone really liked it at our family dinner. Next time I’ll increase the mustard a bit.
I served the leftovers warmed and it was even better!
