What is Cheesy Bread?
It has all the cheese you would want and more!! Slathering it on a big French loaf and then sliding it under the broiler gets it all melty and scrumptious.
This is best served hot out of the oven immediately. This is kind of a cross between cheese bread, pizza, and garlic bread. You have the best of all the worlds!! Have a big crowd coming over? Be sure to serve them Cheesy Bread from simple fare to fancy. Everyone will love it!!

What is the Origin of Cheesy Bread?
We are not so sure where cheesy bread originated. A cheese bread recipe was reported to have been created in Brazil in the eighteenth century when people were using cassava flour in their bread recipes instead of wheat flour.
When they were making the bread, they also threw in rinds of cheese into the mix.

What is Cheesy Bread Made of?
The cheeses are mixed up with mayo, sour cream, butter, herb paste, and garlic! Nothing could be better than that for this cheesy garlic bread!!

Ingredients
Mozzarella cheese, grated – Get a good quality pizza mozzarella for this recipe and grate it yourself. Don’t buy the pre-grated or shredded cheese, as it won’t melt as nicely as freshly grated. Pre-grated cheese contains preservatives like potato starch to keep it from clumping.
Old cheddar, grated- In Canada, we call an aged cheese old, especially when talking about cheddar. Use a good quality aged cheddar for this, so you really get a nice cheddar flavor.
Light mayonnaise – I find light mayonnaise just as good as the full-fat, and it is usually what I have in the house already.
Light sour cream – Again, I use light sour cream all the time, but full fat would work also.
Garlic paste or 1 clove minced garlic – Using a garlic paste or clove of garlic gives much more flavor as opposed to using garlic powder but in a pinch, you can use that or granulated garlic too.
Italian herb paste, or finely chopped herbs of choice – Have you used a herb paste before? They last much longer in the fridge than fresh herbs do. I wouldn’t use dry herbs for this recipe.
Butter softened to almost melting – You want to use nice and softened butter just beyond room temperature so it will easily mix and spread. But not melted butter.
Large French loaf – You want a nice large loaf of bread for this Cheesy Bread. You can use a small baguette, but you will need a few unless you make less cheese mixture.
How to Make Cheesy Bread
In a large bowl, mix together the cheeses. In another medium-sized bowl, mix together the mayonnaise, sour cream, and herb paste.
Mix the butter and garlic together in a small bowl and then add to the mayonnaise mixture. Add the mayonnaise/butter mixture now to the cheese.
Preheat the oven broiler, and slice a loaf of bread in half horizontally. Place crust side down on a rimmed baking sheet. You can cover the pan with either parchment paper or aluminum foil for easy cleaning.
Divide the cheese mixture between the two halves and spread to cover.
Broil until cheese is melted and starts to get golden brown. Let sit for a minute, then slice and serve immediately.

Holy moly!! This is fabulous! I used an end of swiss cheese that was in the fridge instead of mozzarella so it wasn’t stringy but was still yummy.
