What Cut of Meat is Swiss Steak?
Swiss steak is traditionally made from a tough cut of beef like a round steak but we found some sirloin steaks that were very inexpensive and have used those also.
You might also find it called cube steak which is usually top round or top sirloin. It will already be tenderized and flattened.
Because the meat is braised for a long period of time you will end up with a lovely tender piece of meat.
How To Make Swiss Steak
Swiss steak is easy to make but does have a few ingredients. They are simple to grab and once the ingredients are prepped they get added in stages one after another.
Ingredients
Round or sirloin tip steak
All-purpose flour
Smoked paprika
Onion powder
Pepper and salt
Canola oil
Garlic cloves
Celery stalks
Carrots
Onion
Diced canned tomatoes or stewed tomatoes
Beef broth
Worcestershire sauce
Dried thyme, sage, and marjoram
Cornstarch
Preheat oven to 350F.
Pound meat out with a meat mallet to 1/2″ thickness. Cut into small
pieces if needed so that they are single portions.
In a shallow bowl or pie plate combine, flour, paprika, onion powder,
pepper, and salt. Dredge meat in flour mixture.
In a large pot (oven-safe) or Dutch oven heat the canola or vegetable oil on medium-high heat.
Brown the steaks on each side, cooking in batches. Add more oil if
needed. Remove and set aside.
In the empty pot add the garlic, celery, carrots, onions, tomatoes, beef
broth, Worcestershire sauce, herbs, salt and pepper and combine.
Top with the steaks and cover the pot. Place in the oven for 3 hours.
If you would like the gravy thicker then combine the cornstarch with 1
Tbsp. water.
Remove the steaks and add to the tomato gravy. Heat and stir until thickened. Return steaks to the pot to heat again and serve.
How to Cook Swiss Steak
Swiss steaks can be cooked in the oven as shown above or will be equally as good cooked in a slow cooker. Cook on low for 7 hours or on high for 3-4 hours.
What Do You Serve With Swiss Steak?
Serve over mashed potatoes or egg noodles. Because there are lots of wonderful veggies in the recipe, you can just have this as a meal, but if you prefer, you can add a salad to give you some fresh veggies too.
A side of asparagus or green beans would be wonderful also.
What’s the Difference Between Swiss Steak and Salisbury Steak?
Salisbury Steak and Swiss Steak are very different. Salisbury steak is made from hamburger meat and made into a patty.
Plus, the gravy is not tomato-based but more of brown gravy with mushrooms and onions. It is not slowly braised for hours like Swiss Steak but cooked in a skillet instead.

Why is Swiss Steak called Swiss Steak?
Swiss Steak is called Swiss Steak not because it is from Switzerland but because the meat has undergone a process. The process is called “Swissing” in order to make it tender.
Swissing is a process where the meat is hammered, pounded, or rolled to make the meat more tender. Coupling that with a long slow braise will give you meat that is full of flavor and melt in your mouth texture.

Easy Oven Swiss Steak Recipe
Ingredients
- 1 1/2 lbs. round or sirloin tip steak
