This Homemade Pierogi Casserole recipe is infinitely easier than making pierogis from scratch but gives you still all that wonderful flavor of homemade pierogi. This casserole is made even easier by using The Little Potato Company’s Creamer potatoes as they don’t need washing or even peeling. They are just popped into a pot with water to boil.

The Little Potato Company’s Creamer Potatoes are so easy to use, they come pre-washed and require no peeling. The naturally flavorful skin is meant to be eaten. We used the delicious Boomer Gold varietal for this recipe.
Little Potatoes are also conveniently the right size, so they cook evenly and to the same doneness. You won’t have one potato that is hard and undercooked and another that is overcooked. Each Little Potato is the perfect bite.
This Homemade Pierogi Casserole is easy to make, comforting to eat, and a great way to enjoy Creamer potatoes that offer little fuss to work with.
What Goes into Pierogi Casserole?
Really simple, delicious ingredients that are similar to the traditional pierogi, all wrapped up into one gorgeous casserole.
In this cheesy pierogi casserole, instead of cream cheese, we amped up the flavors by using a shallot and chive Boursin cheese that is available in most grocery stores.
Ingredients
1.5 lbs bag of Boomer Gold Little Potatoes
Lasagna noodles (maybe less when using the smaller 8×11″ pan)
Boursin cheese (shallot and chive flavor)
Butter
Milk (more or less as needed)
Green onions, thinly sliced
Shredded cheddar cheese, divided
Bacon, cooked, and crumbled
Salt and pepper to taste
Green onions for topping, optional
How to Make Pierogi Casserole
Delicious mashed potatoes using Creamer Potatoes are further enhanced with a scrumptious cheese mixture and green onions. The finishing glory on this casserole dish is more cheese and some crumbled crisp bacon. Let’s dive into how these are to be made.
Preheat the oven to 350 degrees F.
In a large pot with water, covered, boil the potatoes until soft.
Cook the lasagna noodles as per the package directions, drain and rinse the noodles in cold water and set aside.
Once the potatoes are cooked, drain the water and mash, adding in the butter and milk. The potatoes should be nice and creamy.
Mix in the Boursin cheese, sliced green onions, and 1 cup of cheddar cheese. Salt and pepper to taste.
Place 3 lasagna noodles in the bottom of an 8 x 11 baking dish, sprayed with cooking spray.
Cover the noodles with 1/3 of the potato mixture and continue to layer, finishing with the potatoes.
Top with remaining shredded cheddar cheese.
Bake for 20 minutes, add the crumbled bacon on top and continue to bake for an additional 10 – 15 minutes, or until heated through.
Let stand for 5 minutes before cutting into squares and serving. This recipe gives you 8 hearty servings; you may want to go back for seconds, though!
Serve with a dollop of sour cream and green onions if desired.
What do you Eat with Pierogi Casserole?
Besides the sour cream, bacon, and green onions, you can make a pan of caramelized onions to go with this dish. That is what we always made when serving our homemade pierogies.
If you would like a protein to go along with this recipe, grilled or fried sausage would be excellent. Something like a Kielbasa or Polish sausage would be delicious with this meal.

Can I Make Pierogi Casserole Ahead of Time?
Yes, you can build this casserole ahead of time and pop it into the oven when ready for dinner. Cover with foil and bake for the first 20 minutes, then remove the foil and continue to bake for another 20 minutes or until heated through.
Any leftovers can be easily reheated in the oven again or in the microwave.

- 1 cup 3% milk more or less as needed
- 6 green onions thinly sliced
- 8 oz shredded cheddar cheese divided
- 6 slices bacon cooked and crumbled
- Salt and pepper to taste
- Green onions for topping optional
