Ingredients.

These Monster Eyeball Cookies are soft, chewy, and decorated with candy eyes! A fun and easy Halloween cookie recipe perfect for parties and kids.

Ingredients

All purpose flour – This is standard for a great basic cookie.

Salt – You always need salt in cookies or baking, as it brings out the flavors of other ingredients.

Baking soda and baking powder – Both of these are leavening agents and help the cookies to stay tender yet crisp on the outside.

Butter -This needs to be softened to room temperature.

Sugar – This is used for sweetening, plus more for rolling the cookies in so they have a sugary coating.

Large egg – I always use large eggs for baking and cooking.

Vanilla – Standard flavoring for cookies.

Jell-O – One purple, one green, one orange or whatever colors you want to make. Blue raspberry would be fun to add too.

Food coloring – I like to use gel coloring in purple, green and orange. The gel makes the cookies more vibrant.

Candy eyes – Use multiple sizes to make the cookies fun.

Cream the butter and sugar together in a large bowl or in the bowl of a stand mixer. Add the egg and vanilla to the mixture and continue mixing until combined.

Slowly add the dry ingredients to the butter-sugar mixture and continue to mix until it comes together as a dough.

Dough in three balls colored.

Divide the dough into 3 even pieces and knead in 3 tbsps of different colored Jell-O into each ball of dough. Don’t knead excessively. Add a few drops of food coloring at a time to the dough until you have a rich color you desire.

Cookie balls in sugar.
Flattened cookie dough.

Shape the dough into 1-inch balls, roll them in sugar, then flatten them with the bottom of a bowl or cup. Place them 2 inches apart on a parchment-lined baking sheet.

Recipe Pro Tips

Pro Tips for the Best Monster Eyeball Cookies

Use gel food coloring. It creates bright colors without adding too much moisture to the dough.

Measure flour correctly. Too much flour can make cookies dry and crumbly.

Use a cookie scoop. Evenly sized cookies bake more consistently.

Don’t overmix the dough. Mix just until the ingredients are combined.

Avoid overbaking. Soft cookies are especially delicious with the crunchy candy decorations.

Add candy eyes carefully. Follow the manufacturer’s directions to avoid melting or discoloration.

Mix different eye sizes. Large and small candy eyes create funny, unique monster faces.

Work while the cookies are warm. If your candy eyes can be pressed onto warm cookies, add them before the cookies become too firm.

Let the cookies cool completely. This helps the decorations stay in place before packaging.

Have fun with the designs. The sillier the monster faces, the better!
