Peanut Brittle is one of our favorite candies to make. This one is created in the microwave and nothing could be easier. We usually end up making two batches as one is never enough.
We also love to make White Chocolate Bark, Chocolate Turtles, Saltine Toffee, Easy Chocolate Walnut Fudge, Poppycock, Peanut Butter Popcorn, and Grand Marnier Chocolate Cherries.
Why I Love This Recipe
- Easy to make
- Addictively good
- Great for DIY presents
- Takes little time and effort
- Foolproof recipe
Today’s recipe is super easy but you might have to test it once to see how your microwave is. I have made this in at least three different microwaves and it has turned out each time! Super easy and addictive peanut brittle!! I had to package it up quickly or I would have eaten it all!!
You know peanut brittle, crunchy, slightly salty, sweet and leaves you wanting more!!
Recipe Ingredients
- 1 cup sugar
- 1/2 cup white corn syrup
- 1 1/2 cups salted peanuts
- 1 tsp. butter
- 1 tsp. vanilla
- 1 tsp. baking soda
- Cooking spray
How to Make Peanut Brittle
Spray a rimmed cookie sheet with cooking spray and set it aside.
In a 2 L (2 quart) glass bowl stir together sugar and corn syrup with a wooden spoon until mixed well. Microwave on high or 100% for 6-8 minutes until syrup is pale yellow. Keep a close eye on it!!
Carefully remove the bowl from the microwave, the syrup is very hot. Stir in the peanuts and mix well.
Microwave for 1-2 min. more or until golden in color. Immediately add the butter, vanilla, and baking soda and stir until foamy.
Quickly pour onto the prepared cookie sheet and spread evenly.
Cool and break into pieces.

I make microwave peanut brittle every Christmas, but this year I used parchment paper on the pan instead of butter so it doesn’t stick.

I made this tonight & it is delicious! I just wondered how I could get it to thin out a little more. Mine set up very quickly. I used Splenda sugar blend..would that have any effect on how quickly it sets up or how thin the final product is? Either way, it’s wonderful & super easy!
Noshing with the Nolands says
I don’t know if the Splenda would affect it. It does set up very quick, is yours as thin as mine, that is usually how it turns out.

Great story, haha! Will definitely take your advice and not do anything in the kitchen while recovering from general anesthesia LOL! This peanut brittle looks so good, and I am totally intrigued that it is made in the microwave! Pinning!

I LOVE the Freund corked vials…..a very cute way to give individual homemade hot chocolate mixes.
Jennifer @ Peanut Butter and Peppers says
Oh my gosh, your story is funny!!! The only mess I made in the microwave is I blew a potato up in it and also blew the roof of the microwave out. I forgot to poke holes in the potato. Opps! That was when microwave first came out and they were expensive and boy was my Mom mad at me. he he
I love peanut brittle and this recipe looks perfect! I am sooooooo making this today! It will make a great gift!!
Noshing with the Nolands says
Wow, that really does happen when you don’t poke holes!!! I hope you enjoy the brittle!!

LOL…what a funny story! I guess it might only be funny if you don’t have to clean it up. I love that you can make peanut brittle in the microwave…a must try recipe 🙂
Noshing with the Nolands says
Thanks Liz, now you know a little bit more about me!! LOL
Noshing with the Nolands says
Oh, and guess who had to clean the microwave too, as you know I just had surgery. LOL
Kristen says
I cannot even imagine wanting to make anything after surgery. You must be one determined woman :-). Your brittle looks exactly like mine should have. I just have to figure out how much more time it needs in the microwave with double the ingredients.
Noshing with the Nolands says
I know I am crazy, huh!! Can never rest! Mind is always on the go!! Hopefully this vacation I will have nothing to do and chill!!
Mallory @ Because I Like Chocolate says
This brittle looks delicious! I love putting baking soda in it to give it that extra lightness so it doesn’t break your teeth.

Yes, it does make it easier to eat with the baking soda!! Thanks for coming over Mallory!!

I would buy some Mason jars with handles. I have been wanting to get those for awhile. I would also love to get some cute jars for my seasoning mixes that I make too!
