Peanut Brittle

Peanut Brittle is one of our favorite candies to make. This one is created in the microwave and nothing could be easier. We usually end up making two batches as one is never enough.

We also love to make White Chocolate Bark, Chocolate Turtles, Saltine Toffee, Easy Chocolate Walnut Fudge, Poppycock, Peanut Butter Popcorn, and Grand Marnier Chocolate Cherries.

Today’s recipe is super easy but you might have to test it once to see how your microwave is. I have made this in at least three different microwaves and it has turned out each time! Super easy and addictive peanut brittle!! I had to package it up quickly or I would have eaten it all!!

You know peanut brittle, crunchy, slightly salty, sweet and leaves you wanting more!!

Recipe Ingredients

  • 1 cup sugar
  • 1/2 cup white corn syrup
  • 1 1/2 cups salted peanuts
  • 1 tsp. butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • Cooking spray

How to Make Peanut Brittle

Spray a rimmed cookie sheet with cooking spray and set it aside.

In a 2 L (2 quart) glass bowl stir together sugar and corn syrup with a wooden spoon until mixed well. Microwave on high or 100% for 6-8 minutes until syrup is pale yellow. Keep a close eye on it!!

Carefully remove the bowl from the microwave, the syrup is very hot. Stir in the peanuts and mix well.

Microwave for 1-2 min. more or until golden in color. Immediately add the butter, vanilla, and baking soda and stir until foamy.

Quickly pour onto the prepared cookie sheet and spread evenly.

Cool and break into pieces.

    I make microwave peanut brittle every Christmas, but this year I used parchment paper on the pan instead of butter so it doesn’t stick.

    I made this tonight & it is delicious! I just wondered how I could get it to thin out a little more. Mine set up very quickly. I used Splenda sugar blend..would that have any effect on how quickly it sets up or how thin the final product is? Either way, it’s wonderful & super easy!

      I don’t know if the Splenda would affect it. It does set up very quick, is yours as thin as mine, that is usually how it turns out.

    Oh my gosh, your story is funny!!! The only mess I made in the microwave is I blew a potato up in it and also blew the roof of the microwave out. I forgot to poke holes in the potato. Opps! That was when microwave first came out and they were expensive and boy was my Mom mad at me. he he

    I love peanut brittle and this recipe looks perfect! I am sooooooo making this today! It will make a great gift!!

    I cannot even imagine wanting to make anything after surgery. You must be one determined woman :-). Your brittle looks exactly like mine should have. I just have to figure out how much more time it needs in the microwave with double the ingredients.
