Stuffed Pork Chops

Pork chops, yummy!!! Unless they are dried-out cardboard. Nothing worse!! These Stuffed Pork Chops with Goat Cheese, Chorizo, and Red Peppers are fantastic!! I wanted flavourful juicy pork chops and we delivered on this one. They were delicious and so easy to do.

This is a recipe that you can put together any day of the week! It is perfect for a busy weeknight dinner, or a leisurely week supper for the family. I really believe that pork is an under-appreciated protein. It is much less expensive than beef or seafood, and when you cook it properly it is perfectly juicy and flavourful!

Recipe

1 Chorizo sausage, removed from casing and cooked
1/4 cup finely diced red pepper
1/4 cup softened goat cheese
4 small fresh sprigs of thyme, chopped
4 Thick Cut Pork Chops
Seasoning salt and pepper
Kitchen twine

Instructions

Combine the sausage, cheese, red pepper, thyme and pepper to taste. Slice the pork chops to create a pocket. Stuff with the sausage mixture. Tie the pork chops three times with kitchen twine, evenly spaced. Season the outside with seasoning salt.

BBQ for 15-20 min. at 325F until the pork chops are cooked through. Enjoy!!

    Do these work better with bone-in pork chops or no bone?

      We used boneless pork chops but as long as they are thick enough you can use bone-in.
