I upped the traditional bocconcini, tomato and basil skewers with some focaccia and proscuitto and then drizzled them with a balsamic reduction. I try to keep the pantry stocked with specialty items that I have come across so you can be easily creative with beautiful accompaniments that you have on hand. A great balsamic reduction is a worthy pantry item. These turned out to be awesome and I reallly liked the addition of the bread and proscuitto. I made these recently for a dinner party and they were a hit!! Great for the summer time BBQ as they can be made ahead and brought out while you are busy on the grill. Enjoy!!
To make approx. 9 skewers
18 grape tomatoes
27 cubes of focaccia bread
18 mini bocconcini
300 gms proscuitto, cut in half lengthwise
28 gm package of fresh basil
Balsamic reduction for drizzle
Wrap each cube of foccacia with half a slice of proscuitto. Slide the items on the skewers as follows: bread, basil, tomato, bocconcini and repeat ending with the bread. If made ahead cover with plastic wrap and place in the refrigerator. Drizzle with the balsamic just before serving.





I love the idea of skewers that you don’t need to cook. They are excellent finger foods for any occasion. Delicious!
