Are you just back from vacation? Getting ready to go to the tropics? Or just aching to do so. January is the perfect time to get away from it all and this Pina Colada Smoothie can at least give you the flavors of the tropics right at home and for breakfast!!
Pina Coladas are rich and decadent but a smoothie can be healthy too. Amber loves a smoothie any time of the day and she was extremely happy to receive this one as a mid afternoon snack.
I have to say I love that Magic Bullet for a quick smoothie fix. If I was making more than one I would be more inclined to pull out the larger blender but for one smoothie this machine sure does a quick fix nicely!!
Pina Colada has an infamous history as three bartenders from Puerto Rico all have wanted to stake claim for it’s creation. Whomever created it made a fabulous invention as pineapple and coconut marry perfectly. A little rum is always welcome to when made into a cocktail but today we left that out and made this a breakfast treat!
- 1 cup ice divided
- 1/2 cup coconut yogurt
- 2 rings pineappple, fresh or canned
- 2 Tbsp. pinepple juice, fresh or canned
- Place 1/2 cup of ice in a blender or Magic Bullet, followed by the yogurt, pineapple and pineapple juice. Top with the remaining 1/2 cup of ice. Blend until smooth. Serve immediately.
