It is January now and all the wonderful recipes and meals of the holidays are in the past. Time for us all to eat a bit healthier, so I bring to you this wonderful collection of 40 Healthy Dinner Recipes.

This is a great array of dinner time meals that everyone will be wanting to dive into. 

Having a healthy meal doesn’t mean that it has to be bland and boring. On the contrary a healthy meal can be bursting with flavor.

We have a lot to choose from here and have them broken down into vegetarian, seafood and poultry/beef.

VEGETARIAN

Here is a selection of the best vegetarian recipes around. Easy weeknight meals that you can have made in no time. Simple recipes that have been tweeked over to the healthy side with lots of crunchy fresh veggies or veggies that have been slowly cooked, roasted or stir fried. 

These are recipes that not only you will love but your whole family can indulge in. Personally we eat vegetarian meals once or twice a week at the minimum and all of us love them. 

If you like a salad or soup can be used as a side dish also. I do love a main salad or a big bowl of soup though. That is a complete meal for me.

The satisfying part of these recipes is the added textures from veggies, nuts, chickpeas, pumpkin seeds, quinoa, pine nuts and more.

Seafood is another way to get some healthy fats and proteins into your diet. A quick and delicious meal can be made with fish and seafood. 

Shrimp can be high in cholesterol but it is low in total fat and almost no saturated fat at all. Prep time for most of these dinners is fast too, so try some of them this week!

I love great easy fast healthy dinner recipes. Using turkey and chicken can be a healthy meal for sure but even the right serving of beef can be added in too.

I love taking one steak, cooking it to perfection, slicing it and sharing it with the family with lots of veggies like in our Mediterranean Steak Salad. 

Some of these recipes are very low carb too if that is what you are looking for. They are all easy dinner recipes though for any night of the week. 

Doing a little meal prep ahead of time can help you make easy dinners. Just setting aside 15 minutes to chop and prep some veggies or meat can help you in the final preparation.

This might be in the morning or night before or right when you get home. Then pulling a healthy dinner together can be a flash. Try some of these recipes, our Healthy Mini Pepper Low Carb Nachos are great for game day too!!
