What is Huevos Rancheros?
This very delicious dish traditionally consists of fried eggs served on lightly fried or roasted and charred flour or corn tortillas. We do this dish easily in the oven, getting a lovely crisp on the tortillas with no effort at all. Many people, if not doing our method, would char the tortillas directly on a gas stovetop or grill.
Commonly the tortillas are then topped with pico de gallo, salsa, tomatoes, chili peppers, onions, and cilantro. Also served with them are refried beans, Mexican rice, guacamole, green onions, or avocado slices.
What is in Huevos Rancheros?
This recipe has all the deliciousness of any Mexican food. For anyone that loves Mexican, this is a great brunch dish that can be enjoyed at any time of the day. Making the huevos rancheros on a sheet pan just makes it so much easier, but it is so good you would think you were eating at a Mexican restaurant.
This recipe makes four servings; want more? Simply double the recipe and another sheet pan of huevos rancheros.
Ingredients
6″ inch tortillas (we prefer flour tortillas)
Refried beans
Your favorite store-bought salsa or pico de gallo
Canola oil
Eggs
Shredded Mexican cheese blend
Avocado
Cherry tomatoes cut in half
Green onions, chopped
Fresh cilantro
How to Make Huevos Rancheros
For this recipe, you don’t need to fry the tortilla as using a hot baking pan from the oven crisps up the tortillas. Now, how easy is that?
Preheat oven to 425 degrees F.
Spray a baking sheet with cooking oil and put the sheet pan in the oven while it is preheating.
Spread 3 Tbsps of refried beans in each of the tortillas making a deep “well” in the middle, so the egg won’t run out.
Spread 3 Tbsps of salsa on each tortilla over the refried beans.
Once the oven is preheated, remove the baking sheet from the oven and place the prepared tortillas on it.
Crack an egg in the middle of each tortilla and divide the cheese between the 4 tortillas.
Bake in the oven for 10 – 12 minutes or until the eggs are cooked to desired doneness. Be careful; the eggs will go from not done, not done, to overdone very quickly. It may take you a few tries to get the eggs just right with a nice runny yolk if that is the way you like it. Ovens vary greatly. We like ours still runny.
Serve on a plate and garnish with tomatoes, avocado slices, chopped green onion, and chopped cilantro. You can up the heat if you like with hot sauce or some sliced jalapenos too!
